Lemon Chicken & Mushroom Stroganoff with Cauliflower Rice

Chicken and Mushroom Stroganoff with cauliflower rice

This recipe is a sure taste sensation to be enjoyed by the whole family. Your definatley going to meet your vegetable requirements after this meal. 

Serves: 6

Cooking and Prep Time: 25 minutes

 

Ingredients:

1 tablespoon olive oil 

2 chicken breasts, sliced 

200 g mushrooms, sliced 

40g pakcet Continental Reduced Salt French Onion Simmer Soup 

2 teaspoons dijon mudtard 

2 teaspoons lemon juice 

200 ml light sour cream 

2 sring onion, diced 

1/2 head cauliflower, grated 

Vegetables (i.e. green beans, zucchini, broccoli, Brussels Sprouts) 

 

Method:

  1. Heat olive oil in deep frying pan over medium heat. 

  2. Add diced chicken to pan and cook for 2-3 mintues until brown. 
  3. Add msuhromms to the pan and cook for 2 mintues. 
  4. Add soupt mix, mustard, lemon juice and 2 cups boiling water. bring to a simer and cook for 5-6 minutes. 
  5. Stir through sour cream, cover and remove from heat. 
  6. Add caulfower to a microwave safe dish and cook on high for 4 mintutes until jsut tender. 
  7. Divide between plates an serve with steamed vegetables.
